It’s chanterelle season here on the coast and everyone is serving up these tasty yellow mushrooms! I’ve wanted to go mushroom picking for quite some time but the people around here are so secretive about their spots! One of our friends was kind enough to bring us a shopping bag full of them (Thanks Chris!). We made chanterelles with scallops, chanterelles in cream sauce, chanterelles with pasta…
…Of course I had to figure out a way to incorporate them into a pizza. And of course the pizza had to have bacon (obviously). So here is my recipe for a chanterelle, bacon, garlic pizza of goodness:
1 envelope dry yeast
2 cups warm water
1/2 tsp sugar
4 cups flour
2 tsp salt
Add 1/2 cup warm water to yeast packet and sugar and mix well. Let sit for 5 minutes until it begins to foam. Add remaining water, salt, and flour to bowl and mix well. Let rise for 2-3 hours. Split in half and flatten out onto pizza pan. Spread olive oil as your sauce over the dough. Add cut chanterelles, crumbled bacon and finely sliced roasted garlic. Shred fresh mozzarella over the top and bake at 400 degrees Fahrenheit for 20-25 minutes. Enjoy!
