Chicken noodle soup with vegetables

Calieparation time is 1 hour


8 cups (2 l) of water
1 onion
3-4 chicken drumsticks or any other part of a chicken (tip: it will have more flavor if it has more fat)
2 potatoes
2 carrots
4-6 cups of cauliflower (tip: you can put more if you like)
1 Knorr chicken cube
1 tbl spoon of parsley leafs
4-5 cups of egg noodles
salt and black pepper to a taste


In a big pot put 8 cups of water and add one whole onion and chicken. Bring it to boil and keep boiling for 20 minutes.

Tip: i like to cut the onion a little bit so it releases the juices.

At the same time, peal and cut potatoes in small cubes and add to the water. Boil for another 10 minutes.
Tip: potatoes needs more time to cook that’s why you put potatoes first.

After 30 minutes of boiling carefully take the chicken out. Leave it on a cutting board for couple of minutes until it gets cold enough to remove bones and skin.

Chop the meat into small peaces and put it back into the pot.


Add cauliflower  to the pot.

Add carrots.

Boil it for another 15 minutes. Then add Knorr chicken cube and egg noodles.

Tip 1: you can use your hand as measurement,1 full hand is approximately 1 cup.
Tip 2: You can use any kind of egg noodles. They are also called noodle nests.

Add pepper, salt and parsley and boil it for another 10 minutes or until the noodles are tender.
Tip: try the soup before you add salt.If you add to much salt just add some more water and bring it to boil.

And your soup is ready.


Tip: You can add any kind of vegetables you have (e.g. corn, green beans, peas, broccoli etc.).
