Swedish Pickled Beets


1/2 cup cider vinegar (or white vinegar)
1/2 cup water
1/4 cup sugar
1 teaspoon salt
1/8 teaspoon fresh ground pepper
2 cups beets, thinly sliced, cooked and peeled

1 Combine vinegar, water, sugar, salt and pepper.
2 Bring to a boil; cool. Place beets in a deep bowl and pour dressing over them.
3 Let stand at least 12 hours before serving.
4 Serve with fried fish, hot and cold meats or on a smörgasbord. Enjoy!
