Tomato Soup (Supa de Rosii)

I love tomato soup.  It’s super easy to make, healthy, delicious and filling.  Here’s my version of it.  You can eat it just like this, or with a nice grilled cheese sandwich.  Enjoy!

Ingredients:
-1 quart (4 cups) water
-1 carrot, peeled and finely grated
-1 small onion, finely chopped, or a handful of dehydrated onion
-1 small bell pepper, finely chopped, or a handful of dehydrated pepper
-2 quarts (8 cups) tomato juice or about 10 cups fresh over ripe tomatoes, peeled and cut into chunks
-1/2 cup uncooked rice
-salt and pepper, to taste
Directions:
Bring water to boil.  Toss veggies and tomato juice in it.  Season with salt and pepper.  Add rice and cook for about 30 minutes, or until rice is cooked through.  Enjoy!
