Any easy way to get in those veggies 🙂
2 cans of veggie or chicken broth
1 can crushed tomatoes, undrained
2-3 large carrots, sliced
1 medium zucchini, sliced into 1/4s
1 yellow pepper, diced
1 red pepper, diced
1-2 garlic cloves, to taste, minced
1/4 C chopped onion
salt, pepper, to taste
1-3 teaspoons of basil, to taste
1-3 teaspoons Italian seasoning
2 C brown rice, uncooked (slow cook)
Combine rice, broth and tomatoes in the crockpot and cool for about an hour on low. Then, add in all the veggies and seasonings; cook until rice is done and veggies are tender (about 2 more hours). Sprinkle with mozzarella cheese and enjoy.
*Check the tenderness of the veggies after about an hour… this may cook faster in your crockpot, and it will be mushy if the veggies are over done.
